Jamie Oliver has ham hock recipes up. So does Emeril Lagasse. I have so many things to say about all those ads in the 80’s & 90’s exhorting black people to stop using ham hocks that are profane right now. Martha Stewart has a damned recipe for salt pork & beans on her site. I need to know why we were supposed to think soul food was garbage & the worst thing ever but now it’s fancy & better for you than packaged food.

What the hell?  Ads against ham hocks?  WTF???

Sorry, I just …. I grew up cooking dried kidney beans with an onion and a ham hock. If I ran short of money when I was first on my own I would use a ham hock and a pound of beans to make dinner for a week. 

Now I don’t even SEE ham hocks in the store. I figured, OK, out of fashion (like kidneys and such).  Not that there was a concerted effort to make people stop eating them. *headdesk*

I’m with Karnythia here. I’m going to need to hear someone explain this to me in very small words because I am definitely not getting it.
